When I first started out cooking, if a recipe didn’t turn out the way I wanted, I immediately assumed I had done something wrong. Okay, well sometimes I definitely did, but sometimes it was because the instructions were incomplete or lacking, or the recipe, even if executed perfectly, was just meh.

The truth is, there is no one, way to cook anything. In fact, if history teaches us anything, it is that at some point we will look back at our best practices and deem them WRONG.

When it comes to cooking, the two most important things to consider are: will you like it and if you don’t like it, is there anything you could do to change it. I want you to approach your cooking with a profound sense of entitlement. Feel entitled to modify, change and exclude to suit your own unique tastes. You know what you like, you just need the license and the time to create it.
